Nut for Life - Braised chicken with chestnuts

Ingredients

  • 2 slices ginger
  • 2 cloves garlic
  • 400g chicken thigh
  • 8 shitake mushrooms, rehydrated
  • 1 cup chestnuts (100g, peeled)
  • 1 tbsp Shao Xing wine
  • 1 tsp sugar
  • 1 star anise
  • 1 cinnamon stick
  • 1 cup shitake mushroom soaking liquid
  • 2 tbsp light soy sauce
  • 1 tbsp dark soy sauce
  • 2 tbsp olive oil
  • 2-3 scallions
  • ¼ tsp pepper
  • 1 tsp sesame oil

Method

  1. Heat olive oil in a medium sized pot then sauté garlic and ginger until fragrant.
  2. Add chicken to the pot and stir fry for 2 minutes.
  3. Add all the other ingredients and bring it to a boil.
  4. Reduce the heat to low, cover the pot with a lid and allow it to simmer for 25-30 minutes or until the chicken is tender and chestnuts are cooked.
  5. Remember to stir occasionally.
  6. Serve hot with a bowl of rice.

Tips

If you are not able to get fresh chestnuts, you can also use frozen or canned chestnuts.
